Honey-coriander fruit salad

    This fruit dessert is a little different than the average fruit salad. Grapefruit, apples, pears, oranges and mango are tossed in a honey-sweetened, orange flavoured, grapefruit juice and coriander dressing.

    Serves: 6 

    • 1 large grapefruit
    • 2 tablespoons honey
    • 1/3 bunch fresh coriander, chopped
    • 1/8 teaspoon orange extract
    • 2 Granny Smith apples, peeled and diced
    • 2 pears, peeled, cored and diced
    • 3 oranges, peeled, sectioned and cut into bite-size pieces
    • 2 Golden Delicious apples, peeled, cored and diced
    • 1 mango, peeled, seeded and cubed

    1. Cut the grapefruit in half and set aside one half. Juice the remaining half and combine with honey, coriander and orange extract. Set aside.
    2. Segment the reserved grapefruit and combine with pears, oranges, apples and mango in a large bowl. Pour coriander dressing over the fruit and stir to combine. Chill in the refrigerator for at least one hour before serving.

    The cilantro is the real zinger in this recipe....adds wonderful flavor! Although it takes a while to cut up the fruit, many compliments are sure to be received. I garnished the top of mine with thinly sliced persimmons.  -  23 Nov 2001  (Review from Allrecipes US | Canada)


    Delicious! This is refreshing and a great combination of fruit. A change from the ordinary fruit salad. I didn't have the cilantro nor the jicama so I omitted those.
