This dish is also known as tortilla de patatas. Crisp potatoes and onions are incorporated into a pan-fried omelette. It's then served with chopped tomatoes and spring onions.
is ok, but i can give some advice from spain to do it. the potatoes is better cutted in thin slides is faster to fry & easy to distribute all the omelette long. is better whisk the eggs on a plate and put the fried potatoes on it and mix (remember season the potatoes and the eggs as you like) then pour it on frypan all together. to turn up side down cover the frypan with a plate (check the size of it) and take all together to the sink before turn the frypan on the plate, in case a bite egg get out don't mess all the kitchen, and put back the frypan to the cooker and pour the omelette again on it to cook the other side of the omelette In this way at the end looks omelette with potatoes inside. you can add to the potatoes onion, or peas or more things like tuna...as you like but the original is with onion if the guest like. buena suerte, good luck - 11 Jun 2011
