This is a tasty soup that's quick and easy to make. Sauteed onions and peppers are simmered with chicken in a tomato soup base. Enjoy for lunch or dinner.
I made this recipe exactly as directed and thought it was just "okay". So I added about a cup and a half of cubed velveeta with a little milk, melted it in the microwave and added it along with 1/2 teaspoon chili powder, 1/2 teaspoon cumin and about 1/4 teaspoon of chili pepper flakes. The soup was easy to make but I wouldn't call it spicy. The soup was somewhat bland so I had to add my own spice. A little cumin, cayenne, salt and sliced avocado made the soup a little more tasty. FANTASTIC. I left out the green peppers and used chopped jalepenos instead of the green chile peppers. Perfectly spicy. It is great for when you have a cold, but don't wait until you get one to enjoy this yummy, yummy soup. 10 stars - 27 Mar 2004 (Review from Allrecipes US | Canada)
