Simple chicken soup

    This is a tasty soup that's quick and easy to make. Sauteed onions and peppers are simmered with chicken in a tomato soup base. Enjoy for lunch or dinner.

    Serves: 8 

    • 1 tablespoon olive oil
    • 160g chopped onion
    • 150g diced green pepper
    • 2 cloves garlic, pressed
    • 825ml chicken stock
    • 140g chopped cooked chicken breast
    • 285g tinned chopped tomatoes with chilli

    Prep:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Heat olive oil in a large saucepan over medium heat. Saute onion, green pepper and garlic until tender. Stir in chicken stock, chicken and the chopped tomatoes. Simmer covered for at least 10 minutes. Serve hot.

    I made this recipe exactly as directed and thought it was just "okay". So I added about a cup and a half of cubed velveeta with a little milk, melted it in the microwave and added it along with 1/2 teaspoon chili powder, 1/2 teaspoon cumin and about 1/4 teaspoon of chili pepper flakes.     The soup was easy to make but I wouldn't call it spicy. The soup was somewhat bland so I had to add my own spice. A little cumin, cayenne, salt and sliced avocado made the soup a little more tasty. I would recommend this soup but with a little tweaking.     FANTASTIC. I left out the green peppers and used chopped jalepenos instead of the green chile peppers. Perfectly spicy. It is great for when you have a cold, but don't wait until you get one to enjoy this yummy, yummy soup. 10 stars  -  27 Mar 2004  (Review from Allrecipes US | Canada)
