Spicy Clam and Cream Cheese Spread

    This is a creamy spread, made by blitzing together sun-dried tomatoes with cream cheese, clams and seasonings. Serve with crackers or crusty bread. It also makes a fantastic sandwich filler.

    Serves: 12 

    • 20g sun-dried tomatoes
    • 1 clove garlic
    • 1/2 teaspoon crushed chillies
    • 1/2 teaspoon dried parsley
    • 1/2 teaspoon dried basil
    • 1/4 teaspoon chilli powder
    • 1 dash salt
    • 1 dash pepper
    • 225g cream cheese, softened
    • 2/3 (280g) tin baby clams, drained

    1. In a liquidiser or food processor, puree the sun-dried tomatoes and garlic until smooth. Blend in the crushed chillies, parsley, basil, chilli powder, salt and pepper. Spoon in the cream cheese and clams and continue to blend until smooth. Transfer the spread to a serving bowl and chill until ready to serve.

    We substituted Fresh Folly River(SC) Oysters for the clams and added a little lemon juice and it turned out excellent! We chopped everything by hand and used a mixer instead of a blender which gave it a chunkier effect.
