Spinach, feta and pomegranate salad

    This is a super-nutritious salad. Spinach is tossed with red onion, walnuts, feta, alfafa sprouts and pomegranate seeds in a balsamic vinaigrette. Enjoy as is or as a starter or side dish.

    Serves: 4 

    • 285g baby spinach leaves, rinsed and drained
    • 1/4 red onion, sliced very thin
    • 60g walnut pieces
    • 125g crumbled feta
    • 25g alfalfa sprouts (optional)
    • 1 pomegranate, peeled and seeds separated
    • 4 tablespoons balsamic vinaigrette

    1. Place spinach in a salad bowl. Top with red onion, walnuts, feta and sprouts. Sprinkle pomegranate seeds over the top and drizzle with vinaigrette.

    Didn't have alfalfa sprouts. Added some fresh mint in with the spinach, a little diced cucumber. Really delicious 😋  -  13 Jun 2016

    soooo good.. made for a dinner party and everyone loved it! I used roasted pecans, pom, red onion and feta cheese. I made a dressing ( balsamic with honey, salt and pepper...mixed well then add a bit of olive oil ) and it was great with it!
