About this recipe: This pumpkin pie is not only delicious, but it's also quick and easy to make. A pastry case is filled with a spiced pumpkin filling and then baked to perfection.

  • 350ml water
  • 60g dried milk
  • 1/4 teaspoon freshly grated nutmeg
  • 1 (23cm) unbaked pastry case

  1. Combine pumpkin puree, eggs, sugar substitute, salt, pumpkin pie spice, water and dried milk; mix until smooth and creamy. Pour filling into a unbaked pastry case. Grate nutmeg over filling.
  2. Bake at 220 C / Gas 7 for 13 to 15 minutes. Reduce heat to 180 C / Gas 4 and continue to cook another 40 to 45 minutes.
