Fruity Coronation Chicken

    A nutty and fruity coronation chicken. Prepare a day ahead for best results - it gives the flavours time to meld.

    Ingredients
    Serves: 8 

    • 4 skinless, boneless chicken breast fillets - cooked and diced
    • 1 stalk celery, chopped
    • 1/2 onion, chopped
    • 1 small apple - peeled, cored and chopped
    • 50g (2 oz) sultanas
    • 50g (2 oz) seedless green grapes, halved
    • 50g (2 oz) chopped toasted pecans
    • 1/8 teaspoon freshly ground black pepper
    • 1/2 teaspoon curry powder
    • 175g (6 oz) mayonnaise

    Method

    1. In a large salad bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix all together, tossing to coat. Salad is ready to serve!

    Note:

    Get rid of some of the fat and calories by using half mayonnaise, half crème fraîche.

    i made this recipe and it was very jummy but i did make it lower in fat i used lighter then light mayo, chicken breasts and no nuts it was still very tasty i halft recipes as there only two of us in the house. this recipe was 5g of fat for the amount made for two people so 2.5g for one person not includeing bread but u can get low fat white bread  -  10 Aug 2011

    My parents lived in Scotland 50 years ago. Mother had coronation chicken frequently. They just took me back to Scotland for my first trip. Every time we had coronation chicken sandwiches on the table, she gobbled them up. When we returned, I made this recipe for my family. They loved it. I chopped my cashews up and I did not add raisins. But it was a hit.  -  22 Aug 2017
