    About this recipe: This is a super-easy pasta dish, which is packed full of flavour. Orzo is tossed with basil leaves, sun-dried tomatoes, olive oil and Parmesan cheese. This dish is perfect for packed lunches or dinner.

    Serves: 8 

    • 400g uncooked orzo pasta
    • 20g chopped fresh basil leaves
    • 35g chopped oil-packed sun-dried tomatoes
    • 2 tablespoons olive oil
    • 60g grated Parmesan cheese
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper

    1. Bring a large pot of lightly salted water to the boil. Add orzo and cook for 8 to 10 minutes or until al dente. Drain and set aside.
    2. Place basil leaves and sun-dried tomatoes in a food processor. Pulse 4 or 5 times until blended.
    3. In a large bowl, toss together the orzo, basil-tomato mixture, olive oil, Parmesan cheese, salt and pepper. Serve warm or chilled.
