Cheesy Nachos

    A quick and easy dish, which is perfect for party gatherings. Tortilla chips are topped with cheese, cheese sauce, microwaved until warm, then scattered with sun-dried tomatoes, peperoncini and olives.

    Serves: 4 

    • 285g tortilla chips
    • 450g grated Monterey Jack cheese
    • 175ml ready-made cheese sauce
    • 1 small red onion, diced
    • 5 tablespoons chopped sun-dried tomatoes
    • 5 tablespoons chopped peperoncini
    • 4 tablespoons chopped pitted Kalamata olives

    1. Arrange the tortilla chips on a large, microwave-safe serving plate. Scatter the cheese over the chips; drizzle with cheese sauce.
    2. Heat in microwave until the cheese has melted, 2 to 3 minutes.
    3. Top with onion, tomatoes, peperoncini and olives to serve.


    Peperoncini (also pepperoncini) can be found in speciality shops. Alternatively, you can use roasted red peppers.

    These are so good! I added roasted red pepper the veggies and also added cooked ground italian sausage before i topped the veggies. I was reluctant to make these because of lack of reviews.     Great nachos! I used an Italian blend of shredded cheese, no onion, chopped fresh seeded tomates, black sliced olives, chopped pepperocinis. I don't like my chips in the microwave so I baked at 350 for about 6 to 8 minutes. This is a wonderful change from reg. nachos. Oh yeah I used the tostitos scoops and made them my little individual bowls stuffed to the brim with the cheese and alfredo sauce.     This recipe was unbelievable! I left out the onions. Went to the antipasta bar and also added roasted red peppers and marinated artichokes! One of the best nacho dishes I have ever had. Nice combo for a change...Will make again and again..  -  04 Feb 2008  (Review from Allrecipes US | Canada)
