170g red quinoa, rinsed and drained

Place the water, butter, five spice powder, ginger, black pepper and beef stock cube into a saucepan over medium heat and bring to the boil. Stir the mixture to dissolve the stock cube, then add the quinoa. Reduce heat to a simmer, cover and cook until all the water is absorbed, about 20 minutes.
Red quinoa tastes earthier than its paler counterpart. It can be purchased in speciality shops or online. If unavailable, feel free to use white quinoa.
