    About this recipe: This is a simple and refreshing green salad. Cucumbers are tossed with avocados in a lemon-lime dressing. This salad does well with barbecued meats.

    Ingredients
    Serves: 4 

    • 2 medium cucumbers, cubed
    • 2 avocados, cubed
    • 4 tablespoons chopped fresh coriander
    • 1 clove garlic, finely chopped
    • 2 tablespoons finely chopped spring onions (optional)
    • 1/4 teaspoon salt
    • black pepper to taste
    • 1/4 large lemon
    • 1 lime

    Method
    Prep:15min  ›  Extra time:30min chilling  ›  Ready in:45min 

    1. In a large bowl, combine cucumbers, avocados and coriander. Stir in garlic, onions, salt and pepper. Squeeze lemon and lime over the top and toss. Cover and refrigerate at least 30 minutes.

    What a great recipe. This is a delicious summer salad, perfect for a hot humid day. The only change I made was to use Italian parsley instead of the cilantro because I hate the stuff. Thanks for sharing!  -  16 Aug 2012

    Notice I rated the average just to be fair with the rating,I am not trying to cheat with my rating! I just needed to add something I should have mentioned which is probably why one veiwer saidit looked horrible. DON'T STIR HARD!     OMG THIS WAS AWESOME!! I made this at the last minute and made to recipe exactly as stated. I let it chill for about 45 minutes and it was so good, that's all I ate for dinner. I would suggest using avocados that are slightly green, so they are not too soft when you are mixing. Also, only make enough for what will be eaten at that meal. The avocado's naturally start to brown when cut and the salad is not visually appealing the next day! Good lord, this tasted delicious!!
