    About this recipe: This salad has the perfect combination of flavours and textures. Romaine lettuce is tossed with pears, blue cheese, red onion and walnuts in tangy salad dressing.

    Serves: 6 

    • 75ml tomato ketchup
    • 125ml distilled malt vinegar
    • 150g caster sugar
    • 2 teaspoons salt
    • 250ml rapeseed oil
    • 2 heads romaine lettuce, chopped
    • 115g crumbled blue cheese
    • 2 pears, peeled, cored and chopped
    • 60g toasted chopped walnuts
    • 1/2 red onion, chopped

    1. In a small bowl, mix tomato ketchup, vinegar, sugar and salt. Gradually pour in oil, stirring constantly, until well blended.
    2. In a large serving bowl, toss together lettuce, blue cheese, pears, walnuts and red onion. Pour dressing over salad and toss well to coat.
