    About this recipe: This is a delicious dip, which is perfect as an appetiser or starter. Blackeyed beans are tossed with tomatoes, red onion, chillies and avocados in an Italian dressing. Serve with tortilla chips, crostini, crackers or crusty bread.

    Serves: 32 

    • 2 (410g) tins blackeyed beans, drained and rinsed
    • 2 tomatoes, chopped
    • 1 medium red onion, chopped
    • 45g chopped Scotch bonnet chillies or to taste
    • 225ml Italian dressing
    • cayenne pepper to taste
    • 2 avocados, peeled, pitted and chopped

    1. In a large bowl, mix blackeyed beans, tomatoes, red onion, Scotch bonnet chillies, Italian dressing and cayenne pepper. Stir in the avocados just before serving.
