About this recipe:This pesto is not only packed full of flavour, it's also quick and easy to make. Basil, parsley, walnuts, pine nuts, butter and cheese are blitzed together in a liquidiser until smooth. It's the perfect pasta sauce. You can also use it as a sandwich spread.
2 tablespoons pine nuts
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cloves garlic, finely chopped
15g softened butter
30g basil leaves
15g parsley leaves
125ml extra virgin olive oil
4 tablespoons freshly grated Parmesan cheese
4 tablespoons freshly grated Pecorino Romano cheese

Place walnuts, pine nuts, salt, pepper, garlic, butter, basil and parsley into a liquidiser or food processor. Turn the liquidiser on and add the olive oil in a slow, steady stream. Continue processing until a soft paste has formed. Fold in Parmesan and Pecorino Romano cheeses. Store in the refrigerator covered by 5mm of olive oil to prevent the surface from turning brown.
