Garlic and dill salmon fillets

    A paste is made with loads of garlic, fresh dill and olive oil. This is rubbed onto salmon fillets and left to marinate for a few hours before you cook them. The herb paste is wonderful with salmon but will work well on halibut or cod too!

    Serves: 9 

    • 1.3kg (3 lb) salmon fillets
    • 1 head garlic, peeled
    • handful chopped fresh dill
    • 100ml (4 fl oz) olive oil
    • salt and freshly ground black pepper to taste

    1. In a food processor, pulse the garlic cloves a few times. Add dill and olive oil; continue to pulse a few times to combine and create a paste.
    2. Lay fish fillets in a baking dish, skin side down. Rub garlic mixture over fish. Refrigerate for 2 hours.
    3. Preheat oven to 190 C / Gas mark 5.
    4. Bake in preheated oven for 15 minutes, till just cooked through.

    Not being a fan of salmon, I tried this recipe in the hope that it would add some flavour to what I consider to be a very bland fish. Oh my, it was delicious. Only used half a head of garlic, added more dill, and some lemon juice. I also wrapped the fish in tinfoil to bake them. I will be using this recipe time and ti e again.  -  01 Nov 2015


    Lovely twist on salmon, added some lemon juice and only used 2 cloves of garlic but then I only used 2 small pieces of salmon as just for the two of us, worked into a paste in a bowl didn't need to use processer..... Also wrapped in foil, yummy 😀  -  03 Feb 2016


    With some saute potatoes this is fantastic, and the lemon brings out the best in the salmon.  -  31 Oct 2011
