    About this recipe: These omelettes are deliciously hearty. Each omelette is made with three beaten eggs, filled with ham, turkey, spring onions, tomato, parsley, green pepper and grated Cheddar cheese. Serve as a wonderful breakfast or brunch.

    Ingredients
    Makes: 4 

    • 12 eggs, lightly beaten
    • 3 slices cooked ham, chopped
    • 3 slices cooked turkey meat, chopped
    • 3 spring onions, sliced
    • 1 tomato, diced
    • 1 sprig fresh parsley, chopped
    • 1/2 medium green pepper, diced
    • 225g grated Cheddar cheese

    Method
    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Coat the bottom of a large, lightly greased frying pan with three eggs and cook over medium heat until firm. Top with 1/4 each of the ham, turkey, spring onions, tomato, parsley, green pepper and Cheddar cheese. Fold egg in half over fillings and serve warm. Repeat with remaining ingredients

    This recipe was good but medium is too high to cook the eggs thoroughly on the inside. I had to turn the heat down to medium low so that all the egg was cooked properly.  -  28 Jun 2003  (Review from Allrecipes US | Canada)

    Very good and easy to make! I cut this down to one serving for a three egg omelet. I didn't use turkey meat and just eyeballed the ingredients. I added a little salt and pepper. Perfect with a side of multi-grain toast and orange juice.  -  18 Jun 2010  (Review from Allrecipes US | Canada)

    VERY GOOD...I OMITTED THE PEPPERS AND TOMATOES BECAUSE MY HUSBAND DOESNT LIKE THEM...STILL GOOD WITH JUST THE MEAT AND CHEESE.  -  02 Aug 2005  (Review from Allrecipes US | Canada)
