    About this recipe: This soup is healthy, hearty and packed full of flavour. Onions, celery, carrots and barley are simmered in a tomato soup base. Serve with crusty fresh bread, if desired.

    Ingredients
    Serves: 6 

    • 160g chopped onions
    • 120g chopped celery
    • 120g chopped carrots
    • 2 teaspoons finely chopped garlic
    • 2 tablespoons vegetable oil
    • 600ml water
    • 2 tomatoes, diced
    • 1 (400g) tin chopped tomatoes with juice
    • 300ml chicken stock
    • 4 tablespoons pearl barley
    • 1/8 teaspoon ground black pepper

    Method

    1. In a large saucepan over medium heat, combine the onions, celery, carrots, garlic and oil and saute for 5 to 10 minutes or until all vegetables are almost tender.
    2. Then add the water, fresh tomatoes, tinned tomatoes, chicken stock, barley and ground black pepper.
    3. Stir thoroughly and bring to the boil. Reduce heat to low and simmer for 35 to 40 minutes or until barley is tender.
