Easy peasy tomato soup

    A really easy tomato soup, which takes 15 minutes to make. Tinned tomatoes are simmered with double cream and dried basil. Serve with crusty bread, if desired. For a smoother soup, puree in a liquidiser.

    Ingredients
    Serves: 4 

    • 2 (400g) tins chopped tomatoes
    • 250ml double cream
    • 1 teaspoon dried basil

    Method
    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Place tomatoes in a saucepan. Bring to the boil and then turn down to simmer. Stir in cream and basil and serve.
