About this recipe:A really easy tomato soup, which takes 15 minutes to make. Tinned tomatoes are simmered with double cream and dried basil. Serve with crusty bread, if desired. For a smoother soup, puree in a liquidiser.

250ml double cream
1 teaspoon dried basil

Place tomatoes in a saucepan. Bring to the boil and then turn down to simmer. Stir in cream and basil and serve.
