Tuscan Sausage Soup

About this recipe: This soup is meaty, hearty and packed full of flavour. Spicy pork sausages are baked, sliced and simmered with potatoes and kale in a creamy soup base.

Makes: 4 - 6 servings

  • 12 spicy pork sausages
  • 1 tablespoon vegetable oil
  • 125g diced onion
  • 1 1/4 teaspoons finely chopped garlic
  • 2 tablespoons chicken stock granules
  • 950ml water
  • 2 potatoes, halved and sliced
  • 135g sliced kale
  • 75ml double cream

  1. Preheat oven to 150 C / Gas 2.
  2. Place sausages on a baking tray and bake 25 minutes or until cooked through. Slice into 1.25cm slices.
  3. Heat oil in a large saucepan over medium heat. Saute onions until translucent; add garlic and cook 1 minute.
  4. Stir in stock granules, water and potatoes; simmer 15 minutes.
  5. Reduce heat to low and add sausage, kale and cream; simmer until heated through and serve.
