Red Snapper Ceviche

    This is a simple and delicious no-cook fish dish. It's the Borneo version of the classic ceviche. Red snapper fillets are "cooked" in a seasoned llime juice.

    Ingredients
    Serves: 4 

    • 1 onion, chopped
    • 1 red onion, chopped
    • 1 tablespoon finely chopped fresh root ginger
    • 1 fresh red chilli, finely chopped
    • 1 tablespoon grated lime zest
    • 2 limes, juiced
    • 2 skinned red snapper fillets, cut into thin strips
    • salt to taste

    1. Combine the onion, red onion, ginger, chilli, lime zest and lime juice in a glass or ceramic bowl. Gently stir in the red snapper and season to taste with salt. Cover and refrigerate until the snapper turns white and opaque, about 15 minutes. Serve cold.
