Tuna Tostadas

    This is quick and easy Mexican style dish, which also tastes fab! Crisp tortilla shells (tostadas) are topped with a mixture of refried beans, tuna, salsa, lettuce and avocado.

    Serves: 4 

    • 450g tinned refried beans
    • 75ml skimmed milk
    • 2 (185g) tins tuna in water, drained
    • 1 tomato, diced
    • 1 fresh Scotch bonnet chilli, seeded and chopped or to taste
    • 1 fresh lime
    • 30g finely chopped lettuce
    • 4 tostada shells
    • 250g salsa
    • 1 avocado, peeled, pitted and sliced

    1. Place beans in pot over medium heat. Gradually add milk, stirring constantly, until beans are warmed through. Mix tuna fish, tomatoes, chilli and lime juice together in a bowl.
    2. To assemble, spread beans over tostada shells. Top with tuna mixture, lettuce and avocado and enjoy!

    These are quick and easy to make. I didn't have a scotch bonnet so I subbed a jalapeno. I used solid white Albacore packed in water. The creaminess of the refried beans pair well with the tuna and lime. If you use a good quality tuna don't be afraid to make this.  -  01 Feb 2015


    Since I like tuna and refried beans separately, I decided to give this a try, even though I couldn't picture these two ingredients together. As I suspected, this combination was too strange for me. I'm still giving it 3 stars for 2 reasons. One is that the recipe, made exactly as written, was edible, although not enjoyable. Two is that I thought this was great with cheese substituted for the tuna, which is how I ate the rest of it after the first serving.
