Slow Cooker Cheesy Vegetable Soup

About this recipe: This soup is not only quick and easy to make, it also tastes fab. Mixed vegetables are slowly cooked in a creamy cheese soup base. Enjoy during those cold winter months.


Serves: 6 - 8

  • 450g frozen mixed vegetables
  • 2 (295g) tins condensed cream of chicken soup
  • 600ml water
  • 1 tablespoon finely chopped onion
  • 1/4 tablespoon garlic granules
  • salt to taste
  • ground black pepper to taste
  • 900g processed cheese, such as Kraft singles, unwrapped and chopped

  1. In a large microwave bowl, cook vegetables in microwave for 10 minutes on high. Stir and rotate midway.
  2. In a large slow cooker, mix soup and water. Add onions, vegetables and garlic, salt and pepper to taste and mix. Add cheese and mix. Simmer approximately 2 hours or until soup is creamy and cheese is melted.
