About this recipe: This venison dish is packed full of flavour. Minced venison is blended with cracker crumbs, egg and seasonings, then baked to perfection. Enjoy thickly sliced for dinner or use as a sandwich filler.


Serves: 4 

  • 450g minced venison
  • 1 tablespoon dark brown soft sugar
  • 8 crackers, crushed
  • 1 egg, beaten
  • 1/2 teaspoon prepared mustard
  • 1/4 teaspoon dried coriander
  • 1/2 teaspoon garlic granules
  • 1/2 teaspoon dried onion flakes
  • 1/4 teaspoon ground thyme
  • 1 dash cinnamon
  • 1 dash paprika
  • 3 tablespoons ketchup
  • 1 tablespoon dark brown soft sugar

  1. Preheat oven to 180 C / Gas 4.
  2. Mix together venison, 1 tablespoon dark brown soft sugar, crackers and egg in a bowl. Season with mustard, coriander, garlic granules, onion flakes, thyme, cinnamon and paprika; mix well. Pat mixture into a loaf tin.
  3. Bake in preheated oven about 40 minutes, till no longer pink in the centre. Stir together the ketchup with 1 tablespoon dark brown soft sugar. Spread on top of the meatloaf and place back in the oven for 10 minutes more.

Made it healthier. I got the 20% leaner and made what it told me to do. It was all the talk over dinner nothing left over father didn't compline about it. He wanted me to make more. It's hard to make dinner for stuborn man but this he likes - 08 Feb 2011
