Slushy watermelon vodka

    This is a refreshing alcoholic drink, which is perfect for the summer. Frozen watermelon cubes are blended with sugar syrup, lemon juice, vodka and watermelon liqueur.

    Serves: 4 

    • 625g watermelon flesh, seeds removed
    • 4 tablespoons sugar syrup
    • 2 tablespoons lemon juice
    • 250ml vodka
    • 4 tablespoons melon liqueur
    • 4 twists lemon zest, for garnish

    1. In a food processor, puree the watermelon flesh. Pour the pureed watermelon into empty ice cube trays and freeze for at least 4 hours. Also, freeze 4 martini glasses.
    2. In a liquidiser combine the frozen watermelon cubes, sugar cane syrup, lemon juice, vodka and melon liqueur; blend until smooth. Pour into 4 frozen martini glasses and garnish each with a lemon twist.

    Absolutely incredible! It is a little strong, so you may want to decrease the amount of vodka, as said in another review. But, like them, I managed. FYI simply syrup is 1 cup sugar, 1 cup water, bring to boil in medium saucepan, stir, let cool (see recipe on this site). I can't say enough about this drink - it is awesome!
