About this recipe: Coconut rum is shaken with ice, raspberry liqueur, Blue Caracao, sweet and sour mix, pineapple juice and lemon-lime drink, then served over crushed ice.

Serves: 1 

  • 1 cupful ice
  • 2 tablespoons coconut flavoured rum
  • 1 tablespoon Chambord (raspberry liqueur)
  • 1 tablespoon Blue Curacao
  • 1 tablespoon sweet and sour cocktail mix
  • 4 tablespoons pineapple juice
  • 4 tablespoons chilled lemon-lime fizzy soft drink
  • 4 tablespoons crushed ice

  1. Fill a cocktail shaker with ice. Pour in the coconut rum, raspberry liqueur, Blue Curacao, sweet and sour mix and pineapple juice. Shake for about 15 seconds, then pour into a martini glass filled with a scoop of crushed ice. Garnish with a cocktail parasol.
