About this recipe: This pumpkin pie is not only delicious, but it's also simple to make. A ready-made pastry case is filled with a spiced pumpkin filling, then baked. Serve with whipped cream, if desired.


Serves: 8 

  • 200g caster sugar
  • 110g dark brown soft sugar
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 eggs
  • 425g pumpkin puree
  • 300ml milk
  • 1 (23cm) unbaked pastry case

  1. Preheat oven to 180 C / Gas 4.
  2. In a large mixing bowl, stir together caster sugar, dark brown soft sugar, salt and cinnamon. When these ingredients are well mixed, stir in the eggs followed by the pumpkin puree and milk. Transfer mixture to the pastry case.
  3. Bake at 180 C / Gas 4 for 1 1/2 hours or until a skewer inserted into the pie comes out clean. Cool before serving.
