    About this recipe: A well-flavoured and multi-dimensional dip. Refried beans are layered with mashed avocado, taco seasoned soured cream, tomatoes, black olives, spring onions and grated cheese. Enjoy with tortilla chips.

    Serves: 56 

    • 1 (415g) tin refried beans
    • 2 avocados, peeled and pitted
    • 1 teaspoon lemon juice
    • 450ml soured cream
    • 1 (30g) packet taco seasoning mix
    • 2 tomatoes, diced
    • 45g sliced black olives
    • 1 bunch spring onions, chopped
    • 450g Cheddar cheese, grated

    1. In a 30x30cm or similar sized dish, evenly spread the refried beans in a thin layer.
    2. In a medium bowl, mix the avocado and lemon juice until almost smooth. A few avocado lumps are desirable. Spread the avocado mixture over the refried beans.
    3. In a medium bowl, blend the soured cream and taco seasoning; spread over the avocado mixture.
    4. Sprinkle the tomatoes in a layer over the soured cream mixture, followed by the olives and the spring onions.
    5. Top the dip with a layer of cheese.
