Spicy bacon and vegetable pasta sauce

    I made this pasta sauce with leftovers from the fridge as I needed a quick and easy meal. The amounts for the ingredients are not exact as it's very easy to alter.

    Serves: 2 

    • 60g pasta
    • 1 splash olive oil
    • 3 slices smokey bacon, chopped
    • 2 spring onions, chopped
    • 1 red pepper, chopped
    • handfull mushrooms, chopped
    • 1 teaspoon garam masala
    • 1 splash Henderson's® relish
    • 1 (400g) tin chopped tomatoes

    1. Place pasta in a pan of boiling water for 10 minutes or until tender with a bite at the centre.
    2. While the pasta is cooking, heat the olive oil in a wok or large frying pan and fry the bacon, onions, pepper and mushrooms with the garam masala and Henderson's relish and fry for 5 minutes.
    3. Add the chopped tomatoes and simmer rapidly for 10 minutes or until the sauce thickens.
    4. Once the pasta and the sauce are cooked, drain the pasta and toss together in the wok. Serve with a crusty roll, naan or other bread that you desire.


    This can be altered to use up many different vegetables or you could try using chicken, too.
