Warm chocolate melting cake

    A chocolate cake with a melted chocolate centre . . . serve while still hot with vanilla ice cream :)

    Serves: 4 

    • 226g plain chocolate
    • 113g butter
    • 7 eggs
    • 6 tablespoons caster sugar
    • 100g plain flour

    1. Preheat oven to 185 C / Gas 4 1/2.
    2. Melt the chocolate and butter in a mixing bowl over the top of a saucepan of boiling water on the hob, then cool for 10 minutes. Make sure the water is not touching the bottom of the bowl.
    3. In a separate bowl put in 4 of the eggs and add the sugar. Whisk that together.
    4. Add the flour to the egg mixture and whisk again. Add the remaining 3 eggs and whisk.
    5. Finally add the chocolate and butter mix to the egg mixture and whisk together. Pour the mixture into 4 ramekins (soufflé dishes).
    6. Bake in the oven for 15 to 20 minutes. Even when fully cooked the middle may still be wet because of the chocolate; this is fine.
