Spare ribs in tomato sauce

    Delicious and succulent pork spare ribs, simmered in a rich and well-flavoured tomato sauce. This dish is great to share. Serve with rice, potatoes, pasta or whatever you fancy.

    Serves: 4 

    • Marinade
    • 1/2 tablespoon sugar
    • 1 teaspoon salt
    • 1/2 tablespoon light soy sauce or 1 tablespoon dark soy sauce
    • 1-2 tablespoons cornflour mixed in 1 tablespoon water
    • 450g pork spare ribs, chopped into 2.5cm pieces
    • 1 tablespoon groundnut oil
    • 1 tablespoon groundnut oil
    • 1 medium onion, chopped
    • 1 teaspoon salt
    • 2 tomatoes, chopped
    • Sauce
    • 1 (400g) pasta sauce
    • 250ml water
    • 1/3 teaspoon sugar

    1. Make the marinade by mixing together the sugar, salt, soy sauce and cornflour slurry. Mix in the spare ribs, let marinate for 20 minutes.
    2. Heat a large frying pan with 1 tablespoon oil over high heat. Brown the ribs on both sides, 3-5 minutes. Set aside.
    3. In the same frying pan, heat 1 tablespoon oil over high heat. Stir-fry the onion with 1 teaspoon salt until soft, about 3-4 minutes. Add chopped tomatoes and ribs and mix well. Stir in the pasta sauce, water and sugar, bring to the boil. Turn the heat down to medium-low and simmer for 30-40 minutes. Adjust seasoning accordingly.
