Make the marinade by mixing together the sugar, salt, soy sauce and cornflour slurry. Mix in the pork, let marinate for 20 minutes.
In a small bowl, mix together the miso paste, water, mirin, soy sauce and sake to make the sauce.
Heat a large frying pan with 1 tablespoon oil over high heat. Stir fry the garlic until fragrant, 2-3 minutes. Stir in the pork and cook until done, about 4-5 minutes. Set aside.
Heat the same frying pan with 1 tablespoon oil over high heat. Stir-fry the cabbage with 1 teaspoon salt until soft, 3-4 minutes. Stir in the sauce, yam bundles, pork and mix well. Heat, cover and simmer for 3 minutes. Adjust the seasoning accordingly and serve.
Yam bundles are bundles of noodles made from the konjac plant. The noodles are also known as shirataki noodles. They are low in calories and carbohydrates. If you can't find the bundled versions, use shirataki noodles.
