Creamy Seafood Lasagne

    A delicious homemade lasagne recipe. Lasagne sheets are layered with prawns and crab sticks in a rich and creamy sauce, before being topped with cheese and baked to perfection.

    Serves: 4 

    • 10 prawns, shelled and deveined
    • salt and pepper, to taste
    • Sauce
    • 1/2 (400g) tin cream of mushroom soup
    • 4 tablespoons milk
    • 4 tablespoons water
    • 1 tablespoon cornflour, mixed with 1 tablespoon water
    • 2 tablespoons melted butter
    • 1 tablespoon oil
    • 1 tablespoon oil
    • 1 medium onion, diced
    • 1/2 teaspoon salt
    • 6 seafood sticks, finely chopped
    • 200g assorted vegetables, finely diced
    • 6 lasagne sheets
    • 55g Cheddar cheese, grated
    • 55g mozzarella cheese, grated
    • 1 tablespoon dried basil

    1. Pat the prawns dry and sprinkle with salt and pepper. Let sit for 20 minutes.
    2. Meanwhile, make the sauce by mixing together the soup, milk, water, cornflour slurry and melted butter.
    3. Preheat oven to 245 C / Gas 9.
    4. Heat a large frying pan with 1 tablespoon oil over high heat. Stir-fry the prawns until cooked through, 2-3 minutes. Set aside
    5. Heat the same frying pan with 1 tablespoon oil over high heat. Stir-fry the onion and salt until soft, 3-4 minutes. Add the prawns, seafood sticks and vegetables and mix well.
    6. Add the sauce, stir to mix well.
    7. Spread half of the seafood mixture on the bottom of a baking dish. Cover with 3 lasagne sheets. Top half of the grated mozzarella and half of the grated Cheddar. Repeat this procedure, finishing with cheese.
    8. Bake for 15 minutes or until the top is golden. Sprinkle with basil and serve.
