Heat a large frying pan with 1 tablespoon oil over high heat. Stir-fry the garlic until aromatic, 2-3 minutes. Add the onion and salt, cook until soft, 3-4 minutes.
Stir in all of the peppers, mushrooms and baby corn, cook for 1-2 minutes.
Add the hoisin sauce, oyster sauce and water. Stir to mix. Add the yam bundles and heat through, 2-3 minutes. Scatter with pine nuts and serve hot.
Yam bundles are bundles of noodles made from the konjac plant. The noodles are also known as shirataki noodles. They are low in calories and carbohydrates. If you can't find the bundled versions, use shirataki noodles.
The noodles and straw mushrooms can be found in Chinese/Oriental speciality stores or online.
