Stir fried vegetables in black bean sauce

    A quick and simple Chinese stir fry dish. Red pepper, spring onions, celery, water chestnuts and mushrooms are stir-fried in a garlic and black bean sauce. Serve with rice.

    Serves: 4 

    • Sauce
    • 1 dessertspoon oyster sauce
    • 1 teaspoon sugar
    • 4 tablespoons water
    • 1 tablespoon oil
    • 1 tablespoon finely chopped garlic
    • 2 tablespoons diced red pepper
    • 2 spring onions, chopped into 2.5cm pieces
    • 2 tablespoons black bean and garlic sauce
    • 1 medium onion, diced
    • 1/2 teaspoon salt
    • 2 sticks celery, diced
    • 1 (225g) tin water chestnuts, drained and diced
    • 75g white mushrooms, diced
    • 12 yam bundles, drained
    • 1 dessertspoon cornflour, mixed with 1 tablespoon water

    1. In a small bowl, mix together the oyster sauce, sugar and water to make the sauce. Set aside.
    2. Heat a large frying pan with 1 tablespoon oil over high heat. Stir-fry the garlic, red pepper, spring onions and black bean and garlic sauce until fragrant, 2-3 minutes. Stir in the onion and salt, cook until soft, 3-4 minutes.
    3. Add the celery, water chestnuts and mushrooms and stir. Stir in the sauce and yam bundles, cover and simmer for 2-3 minutes.
    4. Add the cornflour slurry, stir until thickened and serve hot.


    Yam bundles are bundles of noodles made from the konjac plant. The noodles are also known as shirataki noodles. They are low in calories and carbohydrates. If you can't find the bundled versions, use shirataki noodles.

    The noodles can be found in Chinese/Oriental speciality stores or online.
