Stir Fried Prawns with Celery

About this recipe: A delicious Chinese stir-fry dish made with king prawns, carrots, celery, green peppers and roasted walnuts. Serve with freshly cooked white rice, for lunch or dinner.

Serves: 4 

  • 12 frozen cooked king prawns, thawed
  • salt and pepper, to taste
  • 4 tablespoons chicken stock
  • 2 tablespoons water
  • 1 tablespoon cornflour
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 2 carrots, sliced
  • 5 sticks celery, diced
  • 1 tablespoon oil
  • 1 tablespoon oil
  • 2 tablespoons finely chopped garlic
  • 1 medium onion, chopped
  • 1/2 teaspoon salt
  • 1/2 green pepper, chopped
  • 55g roasted walnuts

Prep:15min  ›  Cook:15min  ›  Extra time:15min marinating  ›  Ready in:45min 

  1. Season prawns with salt and pepper. Let sit for 15 minutes. Then mix with chicken stock, water, cornflour, sesame oil and sugar. Set aside.
  2. Bring a large saucepan of water to the boil. Cook the carrots for 3-4 minutes, then add the celery for another 2 minutes. Drain and set aside.
  3. Heat a large frying pan with 1 tablespoon oil over high heat. Fry the prawns until fragrant, 1-2 minutes, set aside.
  4. Heat the same frying pan with 1 tablespoon oil over high heat. Saute the garlic and onions with salt until soft, 3-4 minutes.
  5. Add the peppers, cook for 1-2 minutes. Stir in the carrots and prawns. Quickly mix, turn the heat off and scatter over walnuts before serving.

Lovely dish! I made it a few weeks ago, and now I am making it for my birthday! I don't put walnuts though, as I don't know if everyone likes nuts. - 22 Feb 2015
