Creamy Green Tea Jelly

    This is a Chinese dessert made by blending green tea powder with gelatine, water, sugar and full fat milk. The result is a green tea-flavoured jelly. It's delicious when served with evaporated milk.

    Makes: 4 - 6 servings

    • 15g gelatine granules
    • 300ml water, divided
    • 70g rock sugar
    • 10g green tea powder
    • 450ml full fat milk

    1. Soak the gelatine in 100ml cold water for about 5 minutes, then gently warm the mixture until the gelatine has dissolved. Set aside.
    2. Bring 200ml water to the boil. Stir in the rock sugar and stir until dissolved. Stir in the green tea powder and gelatine mixture.
    3. Allow the mixture to cool, then stir in the milk. Pour into a container and chill for 4 hours or until set.


    Green tea powder and rock sugar can be purchased in Chinese/Oriental speciality stores or online.
