Creamy lychee jelly

    This is a Chinese dessert made by blending chopped lychees with gelatine, water, sugar and full fat milk. The result is a sweet and fruity jelly. It's delicious when served with evaporated milk.

    Serves: 4 - 6

    • 15g gelatin granules
    • 150ml water
    • 30g rock sugar
    • 230g tinned lychees, drained and diced
    • 300ml lychee syrup (from the tin)
    • 200ml full fat milk

    1. Soak the gelatine in 50ml cold water for about 5 minutes, then gently warm the mixture until the gelatine has dissolved. Set aside.
    2. Bring 100ml water to the boil. Stir in the rock sugar and stir until dissolved. Stir in the lychees and syrup.
    3. Mix the lychee mixture, gelatine mixture and milk together. Pour into a container and chill for 4 hours or until set.
