Duck and Pepper Stir Fry

    A simple, yet delicious Chinese dish. Duck is stir-fried with garlic, onions, beansprouts and peppers. Serve with freshly cooked white rice, for lunch or dinner. Enjoy!

    Serves: 4 

    • 350g beansprouts
    • 1 tablespoon oil
    • 1 tablespoon finely chopped garlic
    • 3 spring onions, sliced
    • 1 medium onion, sliced
    • 1/2 teaspoon salt
    • 1/2 red pepper, sliced
    • 1/2 orange or yellow pepper, sliced
    • 1/2 green pepper, sliced
    • 450g cooked duck, sliced
    • 1 tablespoon hoisin sauce
    • 2 tablespoons oyster sauce
    • 3 tablespoons water

    1. Blanch the beansprouts for 30 seconds in boiling water. Drain and set aside.
    2. Heat a large frying pan with 1 tablespoon oil over high heat. Saute the garlic until aromatic, 2-3 minutes. Add the spring onions, onion and salt; cook until soft, 3-4 minutes.
    3. Stir in the peppers and mix well. Add the duck, beansprouts, hoisin sauce, oyster sauce and water. Stir and heat through, 2-3 minutes. Serve.

    Can I use duck breast that is raw? I don't often have cooked duck at the ready.  -  02 Feb 2014
