Moroccan lamb

    Save yourself the hassle and create this fantastic Moroccan lamb recipe with a prepare spice mix sachet, it's so easy! Serve with couscous.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 large onion, chopped
    • 600g lamb, cut into cubes
    • 1 sachet Moroccan lamb spice mix
    • 1 red pepper, chopped
    • 1 (400g) tin chopped tomatoes
    • 100g dried apricots
    • 1 (400g) tin chickpeas

    1. Put the oil in a pan, add onions and fry until cooked. Add the lamb and brown. Add the spice mix and stir.
    2. Add red pepper, tomatoes and 150ml water; stir. Add apricots and chickpeas.
    3. Cover and simmer for 1 hour or until the lamb is tender.
