About this recipe: This pepper salad takes three days to mature, but it's well worth the wait. Pepperoncini, peppadew and roasted red peppers are tossed together with pepperoni, mozzarella, Cheddar and Gruyere cheese.

Serves: 12 

  • 375g sliced pepperoncini peppers
  • 2 1/2 (375g) jars peppadew piquant mild sweet peppers, drained and sliced
  • 100g roasted red peppers, sliced
  • 450g whole pepperoni sausage, cubed
  • 450g mozzarella cheese, cubed
  • 225g Gruyere cheese, cubed
  • 225g mature Cheddar cheese, cubed
  • 100g fresh mushrooms, thinly sliced
  • 250g black olives, drained and thinly sliced
  • 4 cloves garlic
  • 4 1/2 tablespoons dried oregano
  • 250ml rapeseed oil
  • 4 tablespoons olive oil

  1. In a large bowl with a lid, stir everything together. Cover tightly with the lid and let stand in fridge for 3 days. Shake the bowl often. This can be served cold, but is better when you let it come to room temperature.
