Spicy white fish with beans and chorizo

    A really easy to make, quick, tasty and different way to serve your fish, with chorizo, red kidney beans and spicy tomato sauce.

    Ingredients
    Serves: 4 

    • 1 tablespoon olive oil
    • 1 onion, chopped
    • 25g chorizo
    • 2 garlic cloves, crushed
    • 700g chopped tomatoes or passata
    • 1 (400g) tin red kidney beans
    • 1 tablespoon Cajun spice or similar to taste
    • 4 white fish fillets

    Method
    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Heat oil in pan and soften onion for 5 minutes.
    2. Add chorizo and garlic and fry for 2 minutes or until chorizo is slightly crisp.
    3. Add tomatoes, beans and spice and simmer for 5 minutes.
    4. Add the fish, cover and cook for 3 to 5 minutes, until fish flakes easily.
