About this recipe:I usually make sure not to use alcohol if my son will be eating the food too, but this has so little amaretto in it that I'm not bothered about him eating it. You can leave it out if desired, and even add a few drops of all natural almond extract instead.
250g butter, room temperature
150g caster sugar
1 teaspoon vanilla extract
1 teaspoon baking powder
3 tablespoons amaretto (almond liqueur)
6 tablespoons lukewarm water
100g ground almonds

Beat the butter and sugar until light and creamy. Add the eggs one at a time, beating after each addition, then beat in the vanilla extract.
Mix the flour with baking powder. Add to the eggs and then stir in the water and amaretto. Stir in the ground almonds so that they're mixed in evenly.
Spoon into a hot, greased waffle iron. Serve with whipping cream.
