    About this recipe: When you can find chanterelles, this recipe is a must. Chanterelle mushrooms are sauteed with bacon and onion, then combined with soured cream and finished with freshly chopped parsley. Serve over toast or grilled ciabatta for a luxurious starter or light main.

    Ingredients
    Serves: 4 

    • 750g chanterelles
    • 125g lean smoked bacon, diced
    • 3 onions, finely chopped
    • 2 teaspoons plain flour
    • 250ml soured cream
    • salt and freshly ground black pepper to taste
    • Fresh parsley, chopped

    Method
    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Clean and cut the chanterelles into pieces.
    2. Fry the bacon over medium heat. Add the onions and fry until translucent. Add the mushrooms and sauté for 15 minutes in a covered pan.
    3. Mix the flour with the soured cream and add to the mushrooms. Season with salt and pepper and stir in chopped parsley right at the end.
