Creamy baked chicory with ham

    If I know that I'm not going to have any time to cook next evening, I prepare this in advance and then all I have to do is stick it in the oven. Very practical and always delicious.

    Serves: 4 

    • 750g chicory
    • 60g butter
    • 30g plain flour
    • 350ml milk
    • 300g grated Sbrinz or Parmesan cheese
    • freshly ground black pepper to taste
    • 1 pinch of grated nutmeg
    • 375g cooked ham, sliced

    Prep:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Preheat oven to 200 C / Gas 6.
    2. Wash the chicory and cut in half lengthways. Cut the bitter stalk out of the middle.
    3. Melt half of the butter in a pan and sauté the chicory for 5 minutes. Remove from pan and set aside.
    4. Melt the remaining butter and stir in flour, then gradually the hot milk. Beat hard with a whisk and bring to the boil. Simmer for 5 minutes over low a heat while stirring continuously. Add half of the cheese to the sauce. Season with nutmeg and pepper.
    5. Wrap each half of chicory in a slice of ham wrap and place in a baking dish. Pour sauce over top. Sprinkle with the remaining cheese.
    6. Baste with the sauce and bake for 25 minutes until golden brown.

    this was a Belgium recipe i have been making this once a month!!!  -  19 Nov 2014


    traditional Dutch/Flemish food...we call it witlof ( whiteleave)...boil the witlof, ( 20 min ) cut them in halves put cheese in the middle, wrap in ham......easy... with or without the oven bit... with the oven bit...I guess boil them for a shorter period...don't forget to drain them...or you will flood your plate  -  04 May 2016
