Refreshing banana smoothie

    This is a quick and easy banana smoothie, great especially in summer or as a between-meals snack. It's got a punch of citrus - both lemon and orange - which makes it refreshing and not too thick.

    Serves: 4 

    • 1 ripe banana, sliced
    • 1 teaspoon vanilla extract
    • Juice of 1 lemon
    • Juice of 1 orange
    • 750ml milk
    • Sugar to taste (optional)

    1. Puree the pieces of banana, vanilla, lemon and orange juice with some of the milk. Add the remaining milk and purée again. Add sugar, puree again and serve immediately.

    I skipped the vanilla extract and added a good dollop of vanilla Greek yogurt, since I like the creaminess that brings to a smoothie. Used a frozen banana and added crushed ice, since we prefer a consistency a little on the thick side. Particularly like the addition of the fresh lemon and orange juices in this smoothie.
