Bobbia is a vegetarian salad from Sicily and tastes best with real sun-ripened tomatoes. In Italy it is traditionally served lukewarm, but it also tastes great as a cold salad.

500g beef tomatoes
500g red and green peppers, cut into pieces (not too small)
500g onions, roughly chopped
500g potatoes, washed and diced
salt and freshly ground black pepper to taste
125ml extra virgin olive oil

Cut the tomatoes into wedges and cut out the stem. Put the tomatoes in boiling water, then rinse with cold water and peel them.
Add all damp vegetables to a saucepan and season with salt and pepper. Pour the oil over them and put the lid on the pan.
Cook the vegetables over a low heat for 45 minutes, stirring occasionally.
