Broccoli and Garlic Side Dish

    My little daughter loves broccoli when I prepare it like this. It can be made in a jiffy and is always a success. With just four ingredients, it makes broccoli surprisingly tasty. An all-round family favourite.

    Serves: 2 

    • 300g fresh broccoli
    • 1 clove garlic, finely chopped
    • 1 1/2 tablespoons olive oil
    • 120ml chicken stock

    1. Wash the broccoli and cut into bite-sized pieces.
    2. Heat olive oil in a large pan and sauté the garlic over a gentle heat fir 2-3 minutes. Add the broccoli and stir it in the pan for 2 minutes so that it is covered with olive oil. Now add the chicken stock and cover. Increase the temperature to a medium heat and fry for approximately 8 minutes, until the broccoli is soft.

    This is one of my go-to broccoli recipes since it's quick AND healthy. I sometimes add a squirt of lemon juice to brighten it up and usually use veggie stock or just water for the liquid. One of my husband's favorites!  -  20 May 2013  (Review from Allrecipes AU | NZ)
