Carrot hash browns

    A simple vegetarian dish - I often make it during the week. Serve with grilled halloumi for an interesting meal. It also makes a tasty side dish to your favourite chicken dish.

    Serves: 2 

    • 300g carrots, peeled and grated
    • 250g potatoes, peeled and grated
    • 1 onion, finely chopped
    • 2 eggs
    • 2 tablespoons flour
    • 2 tablespoons sunflower seeds
    • salt and pepper to taste
    • nutmeg to taste
    • oil for pan frying

    1. Mix the grated carrots, grated potatoes, onions, eggs, flour and sunflower seeds and season with salt, pepper and nutmeg.
    2. Form small hash browns. Heat oil in a pan and fry the hash browns on both sides until golden brown.
