This is a great finger food for the New Year's Eve buffet or any other special occasion. I got the recipe from a friend last year on New Year's Eve and always take this starter with me when I'm invited somewhere. This recipe is for 2 large plates.

1 apple, cored and finely diced
180g Gorgonzola or other blue cheese, crumbled
3 sticks celery, finely diced
3 tablespoons mayonnaise
1 tablespoon lemon juice
125g roasted hazelnuts, chopped

For the stuffing: Mix the apples, gorgonzola, celery, mayonnaise and lemon juice. Season with salt.
Break apart the chicory, wash and shake dry. Arrange the chicory leaves on a plate in a fan. Spoon the filling onto the chicory leaves and sprinkle with the roasted hazelnuts.
