Chinese cabbage salad with apple, tangerine and lemon-yoghurt dressing
This is a deliciously different salad with loads of fresh flavours. Chinese cabbage is one of my favourite salad ingredients. Apple and tangerine taste great with it and add a special something, along with the easy homemade dressing.

500g Chinese cabbage
3 tangerines, peeled and cut into small pieces
1/2 apple, finely diced
For the dressing
200g natural yoghurt
juice of 1 lemon
1 teaspoon sugar
salt and pepper to taste

Wash cabbage, drain, cut in quarters and cut into small strips.
Mix the yoghurt and lemon juice and season the yoghurt dressing with sugar, salt and pepper. Place the Chinese cabbage, tangerine and apple pieces in a bowl, pour the dressing over and mix well. Leave to infuse for about half an hour.
